Asiago Cheese + Udon Noodle Bowl

I am all about hearty breakfasts, can't start my day without it. And this one started out amazingly. Asiago cheese eaten with Japanese-style udon noodles in a soup of garlic, egg, tomato, and salt fried in corn oil then cooked in chicken broth. The salty and creamy from the cheese blended so nicely with the chewy noodles and egg, the tart and juicy tomato, and the salty, savory flow of the soup. Mouth happy, stomach full, mission accomplished.

Nutrition:
  • udon with garlic/egg/tomato/chicken broth/salt/corn oil = 780 Calories, 4.5g fiber, 45% of daily Vitamin C, 37% of daily Vitamin A, 1946mg Sodium, 9% of daily Calcium, 12% of daily Iron
  • 1/3 Vino e Formaggio Asiago cheese spread = 82 Calories, 303mg Sodium, 3.5g fiber, 17.5% of daily Calcium
Total Calories = 862
Wow almost a day's worth of Sodium, but also half a day's worth of Vitamin C, a third of a day's fiber, a quarter of a day's Calcium, plus some Iron. Besides the Sodium overload, everything else on the mark. Avocado could be a substitute for the cheese to reduce Sodium.
